Easy, Healthy Fat Trail Mix

This easy, healthy trail mix provides a boost of healthy fat for instant energy. Not all fat is created equal – healthy fats are a great energy source, and aid in weight loss, brain function, and absorption of vitamins. Plus they taste good. This trail mix has provides a boost of healthy fat in the form of nuts, coconut, and coconut oil. Pair 1/4 cup with a high protein greek yogurt for breakfast or eat it alone as a snack.

INGREDIENTS

1 cup coconut oil, melted
1/2 cup Swerve granular
4 TBLS cinnamon 
16oz bag Simple Truth Mixed nuts 
8oz bag coconut large baked flakes 
1 cup dark chocolate chips 
(optional) choice of seeds

INSTRUCTIONS

Mix coconut oil, swerve, and cinnamon in a bowl. Add nuts, coconut flakes and seeds (if using) and mix until coated. Spread on a cookie sheet and bake 20 minutes at 250. Add choc chips when fully cooled. Store in an airtight container up to 2 weeks.
